Roasted Pumpkin Galette
A while back, I was determined to make my own, from-scratch, pumpkin pie. I mean ALL THE WAY from scratch. I purchased some heirloom pumpkin seeds, grew the pumpkins myself, harvested and stored them until thanksgiving. I selected the best looking one, peeled it, removed the seeds, cut into cubes, roasted them, pureed them, then baked the puree into a pie. So much work. I took a bite. Imagine my surprise and disappointment as it tasted no different from the canned pumpkin pie I grew up eating. I set to work creating a truly delicious pumpkin pie, that tasted homemade and celebrated everyone’s favorite orange gourd. The result has a rich caramel flavor, warm spices and a flakey crust for the perfect autumn treat.
